Over the weekend I had a very merry unbirthday party. My sisters hosted the event on Saturday night with giant clocks, tea cups, playing card napkins, and concoctions that will make you taller or smaller. I loved this theme! It was very playful and brought out my inner child.

Over the weekend my family gathered for Sunday lunch. I decided to make dessert, and I was pleasantly surprised how easy it is to make Coconut Macaroons. They were a hit! I love macaroons and as of recently the French Macaroon has been becoming a trend and parties and events! Could they be replacing the cupcake? I hope so!
Coconut Macaroon Recipe
1 and a half cups sweetened shredded coconut
2 egg whites
1/4 tsp vanilla extract
2/3 cup granulated sugar
Beat egg whites and gradually add in sugar while beating until peaks are stiff and glossy then fold in the coconut.
Use a teaspoon to form macaroons into balls and place on greased (or Pam sprayed) baking sheet.
Bake at 325 degrees F for 18 minutes until slightly browned to your liking
